Onion Jam
Ingredients
- 4 large red onions, finely sliced
- 1/4 cup (55 g) butter
- 3/4 cup (160 g) sugar
- 1/4 cup (60 ml) red wine vinegar
- 1 1/2 cups (375 ml) red wine
Instructions
- In a saucepan over high heat, soften the onions in the butter for 10 minutes. Add the sugar and vinegar. Cook for 10 minutes while stirring. Add the wine and cook over very low heat, stirring occasionally, until all the liquid has evaporated, about 1 hour 15 minutes. Season with salt and pepper.
- Serve with pâtés or terrines, if desired. For example, with the Duck Breast and Caramelized Onion Jam Crostini or the Guinea Fowl Terrine with Apricot and Pistachios.
