Ингредиенты

  • 1/2 cup (125 ml) fresh dates, pitted and coarsely chopped
  • 1 cup (250 ml) water
  • 1 cup (250 ml) sugar
  • 1/4 cup (60 ml) light corn syrup
  • 2 cups (500 ml) unbleached all-purpose flour
  • 1 1/2 teaspoons (7.5 ml) baking powder
  • 1/2 teaspoon (2.5 ml) baking soda
  • 1/4 teaspoon (1 ml) salt
  • 1/2 cup (125 ml) unsalted butter, softened
  • 1/2 cup (125 ml) brown sugar
  • 1/2 cup (125 ml) pitted dates, finely chopped
  • 3 eggs
  • 1/2 cup (125 ml) sour cream
  • 1/2 cup (125 ml) milk

Инструкция

  1. In a blender, purée the dates with 180 ml (3/4 cup) of water until smooth. Set aside.
  2. In a saucepan, bring 60 ml (1/4 cup) of water, the sugar and corn syrup to a boil. Clean the sides of the pan with a wet brush to remove any sugar crystals. Cook without stirring until the mixture turns golden brown. Off the heat, gradually add the puréed dates. Beware of splashes. Bring to a boil, stirring until the mixture is smooth. Let cool and refrigerate until the mixture is room temperature.
