Yogurt dip with Confit Tomatoes and Cashews

Ingredients
- 1 1/4 cups (310 ml) 10% plain yogurt
- 1 garlic clove, finely grated
- 1 tbsp dill, finely chopped, plus more for garnish
- 1 garlic clove, thinly sliced
- 3 tbsp (45 ml) vegetable oil
- 3/4 cup (105 g) cherry tomatoes, halved
- 1/2 celery stalk, diced
- 1/2 bird’s eye chili pepper, seeded and finely chopped or 1/4 tsp red pepper flakes
- 1/2 cup (65 g) seasoned cashews, coarsely chopped
- Pita chips or corn chips, for serving

- In a bowl, combine all of the ingredients. Season with salt. Set aside.
