Chocolate Hazelnut Madeleines

Ingredients

  • 4 oz (115 g) 70% dark chocolate, chopped
  • 1/2 cup (115 g) unsalted butter
  • 3/4 cup (115 g) unbleached all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3 eggs
  • 1/2 cup (105 g) sugar
  • 1/2 tsp (2.5 ml) vanilla
  • 6 oz (170 g) 70% dark chocolate, melted and cooled
  • 1/4 cup (35 g) roasted blanched hazelnuts, chopped

Instructions

  1. With the rack in the middle position, preheat the oven to 400°F (200°C). Generously butter two 12-cavity madeleine moulds.
  2. In a bowl set over a pot of boiling water or in the microwave oven, melt the chocolate with the butter. Let cool.
  3. Meanwhile, in another bowl, combine the flour, baking powder and salt.
  4. In a third bowl, whisk the eggs and sugar for 2 minutes with an electric mixer. Add the chocolate mixture. Stir in the flour mixture until combined.
  5. Fill each cavity three-quarters full with batter. Bake for 8 minutes or until puffed up. Unmould onto a wire rack and let cool completely, about 1 hour.
