Ingredients

  • 1 3/4 cups (265 g) unbleached all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp chai tea or 2 tea bags with the tea removed (see note)
  • 1 1/4 cups (265 g) brown sugar
  • 1/2 cup (125 ml) vegetable oil
  • 1 tsp (5 ml) vanilla
  • 2 eggs, at room temperature
  • 3/4 cup (180 ml) 11% plain yogurt
  • 1 cup (180 g) Empire apples, unpeeled, grated (about 2 small apples)
  • 4 Empire apples, unpeeled, cored, cut into rounds 1/4 inch (5 mm) thick
  • 1/4 cup (55 g) brown sugar
  • 2 tbsp butter
  • 2 tbsp (30 ml) lemon juice
  • 1/2 block (125 g) cream cheese, softened
  • 2 tbsp brown sugar
  • 1/2 cup (125 ml) 35% whipping cream

Instructions

  1. With the rack in the middle position, preheat the oven to 350°F (180°C). Butter the sides of an 8-inch (20 cm) springform pan and line the bottom with parchment paper.
  2. In a bowl, combine the flour, baking soda, baking powder, salt and tea.
  3. In another bowl, whisk the brown sugar, oil and vanilla with an electric mixer. Add the eggs one at a time and mix until smooth. With the machine running on low speed, add the yogurt and dry ingredients. Mix until smooth. Using a spatula, fold in the grated apples. Spread the batter out in the prepared pan.
  4. Bake for 1 hour or until a toothpick inserted in the centre of the cake comes out clean. Let cool completely on a wire rack, about 3 hours, before unmoulding.
