Pear and Lavender Mimosas

Ingredients

  • 1 ½ cups (375 ml) water
  • 1 ½ cups (315 g) sugar
  • 3 very ripe pears, cored and diced
  • 5 tsp dried lavender flowers (see note)
  • ¾ cup (180 ml) pear and lavender
  • 2 tbsp (30 ml) lemon juice
  • 2 ¼ cups (560 ml) Prosecco or other sparkling wine, cold
  • 1 pear, ripe but firm, halved, cored, each half sliced
  • Fresh lavender flowers with stems (optional)

Instructions

  1. In a pot, bring the water, sugar and pears to a boil until the sugar has dissolved. Simmer over medium heat for 10 minutes. Remove from the heat. Add the lavender flowers. Cover and infuse for 15 minutes.
  2. Strain the syrup through a sieve, pressing the pears with the back of a ladle to extract as much syrup as possible. Compost the pears and lavender. Refrigerate until the syrup is completely chilled, about 1 hour.
