Pear and Lavender Mimosas
Ingredients
- 1 ½ cups (375 ml) water
- 1 ½ cups (315 g) sugar
- 3 very ripe pears, cored and diced
- 5 tsp dried lavender flowers (see note)
- ¾ cup (180 ml) pear and lavender
- 2 tbsp (30 ml) lemon juice
- 2 ¼ cups (560 ml) Prosecco or other sparkling wine, cold
- 1 pear, ripe but firm, halved, cored, each half sliced
- Fresh lavender flowers with stems (optional)
Instructions
- In a pot, bring the water, sugar and pears to a boil until the sugar has dissolved. Simmer over medium heat for 10 minutes. Remove from the heat. Add the lavender flowers. Cover and infuse for 15 minutes.
- Strain the syrup through a sieve, pressing the pears with the back of a ladle to extract as much syrup as possible. Compost the pears and lavender. Refrigerate until the syrup is completely chilled, about 1 hour.
