Chocolate and Blueberry Tart
Ingredients
- 2 cups (280 g) chocolate cookie crumbs
- 2 tbsp sugar
- 6 tbsp (85 g) unsalted butter, melted
- 1 pinch fleur de sel
- 3/4 cup (115 g) fresh blueberries
- 8 oz (225 g) 58% dark chocolate, chopped
- 1 cup (250 ml) 35% whipping cream
- 1/2 cup (125 ml) milk
- 1/4 cup (55 g) sugar
- 3 egg yolks
- 2 oz (55 g) white chocolate, chopped
- 1/2 cup (125 ml) 35% whipping cream
- 1 tsp gelatin
- 5 tsp (25 ml) water
- 2 tsp cornstarch
- 3/4 cup (115 g) fresh blueberries
- 2 tbsp sugar
- 1/4 cup (40 g) fresh blueberries
- 1/3 cup (45 g) fresh blackberries (optional)
- Edible flowers (optional)
Instructions
- With the rack in the middle position, preheat the oven to 350°F (180°C).
- In a bowl, combine all of the ingredients. Firmly press the mixture into the bottom and up the sides of a 10 1/2-inch (27 cm) tart pan with removeable bottom.
- Bake for 12 minutes. Let cool for 30 minutes.
