Pickled Green Beans

Ingredients

  • 7 oz (200 g) green beans or yellow wax beans, trimmed (see note)
  • 1/2 cayenne chili pepper, seeded
  • 1 garlic clove, halved
  • 1 dill sprig or dill flower cluster
  • 1 tarragon sprig
  • 1/2 cup (125 ml) water
  • 1/2 cup (125 ml) white vinegar
  • 1 tbsp sugar
  • 2 tsp coarse pickling salt

Instructions

  1. In a wide-mouth 2-cup (500 ml) glass jar, place the beans, chili pepper, garlic and herbs. Set aside.
  2. In a small pot, bring the water, vinegar, sugar and salt to a boil. Simmer over low heat for 3 minutes or until the sugar and salt have dissolved.
  3. Cover the beans with the boiling liquid, leaving a 1/2-inch (1 cm) of space at the top of the jar. Let cool. Seal the jar and refrigerate. Let marinate for 24 hours. The beans will keep for 1 month in the refrigerator.
