Hearty Indian-Style Chicken Soup
Ingredients
- 1 tbsp fresh ginger, finely chopped
- 2 garlic cloves, finely chopped
- 2 tbsp butter
- 1 1/2 tsp curry powder
- 4 cups (1 litre) chicken broth
- 1/2 cup (100 g ) basmati rice, rinsed and drained
- 2 cups (300 g) sweet potato, peeled and cut into large dice (about 1 large sweet potato)
- 1 1/2 cups (255 g) cooked chicken, shredded
- 1 cup (150 g) frozen green peas, thawed
- 1 can (14 oz/398 ml) coconut milk
- Cilantro leaves, to taste
- 1 small chili pepper, seeded and finely chopped (optional)
Instructions
- In a pot over medium-high heat, soften the ginger and garlic in the butter for 1 minute. Add the curry powder and cook for 30 seconds while stirring. Add the broth and rice. Season with salt and pepper. Bring to a boil.
- Add the sweet potato and chicken. Simmer for 8 minutes or until the potato is tender and the rice is al dente. Add the peas and coconut milk. Cook for 2 minutes. Adjust the seasoning.
- Serve the soup in bowls. Garnish with cilantro leaves and the chili pepper. Serve immediately.
