Chili Con Carne (The Best)
Ingredients
- 1/4 lb (115 g) bacon, diced
- 1 tbsp (15 ml) olive oil
- 2 lb (900 g) lean ground beef
- 2 onions, chopped
- 2 garlic cloves, chopped
- 1 tbsp ancho chili powder (see note)
- 2 tsp sweet paprika
- 1 1/2 tsp ground cumin
- 1 tsp dried oregano
- 1/2 tsp ground black pepper
- 2 1/2 cups (625 ml) beef broth
- 2 cans (19 oz/540 ml each) red beans, rinsed and drained
- 1 can (28 oz/796 ml) diced tomatoes
- 1 cup (150 g) frozen corn kernels
- 1/2 cup (25 g) cilantro stems and leaves, finely chopped
- 1/2 red bell pepper, seeded and diced
- 1 tbsp (15 ml) lime juice
- 1 small red onion, thinly sliced
- 2 tbsp (30 ml) lime juice
- 1/2 tsp sugar
- 1/4 tsp salt
Instructions
- In a large pot over medium heat, brown the bacon in the oil. Using a slotted spoon, remove the bacon from the pot and drain in a bowl lined with paper towels.
- In the same pot over high heat, cook the beef in the bacon fat, breaking it up with a wooden spoon, until starting to brown. Add the onions and cook for another 3 minutes. Add the garlic and spices. Cook for 1 minute longer while stirring. Add the broth, beans, tomatoes and bacon. Mix well. Bring to a boil. Simmer for 50 minutes or until the chili has thickened, stirring regularly while cooking. Adjust the seasoning.
