Egg-Free Waffles
Ingredients
- 1 cup (250 ml) milk or non-dairy beverage of your choice (see note)
- 1 tbsp (15 ml) lemon juice
- 1 cup (150 g) unbleached all-purpose flour
- 3 tbsp brown sugar
- 1 tbsp cornstarch
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 3 tbsp (45 ml) vegetable oil
Instructions
- In a bowl, combine the milk or non-dairy beverage with the lemon juice. Let sit for 5 minutes.
- In another bowl, combine the flour, brown sugar, cornstarch, baking powder, baking soda and salt. Add the milk mixture and oil. Whisk with an electric mixer until smooth. Let the batter sit for 10 minutes.
- Preheat a waffle iron. Pour about ¼ cup (60 ml) of the batter into each cavity. Close the machine. Cook for 4 to 5 minutes or until the waffles are cooked through. Keep warm. Repeat with the remaining batter.
