Hazelnut, Cherry and Amaretto Brownies
Ingredients
- 3 oz (85 g) white chocolate, chopped
- 3/4 cup (180 ml) 35% whipping cream
- 1 tbsp (15 ml) almond liqueur (amaretto)
- 1/2 cup (75 g) unbleached all-purpose flour
- 1/3 cup (45 g) roasted hazelnuts, chopped
- 1/4 tsp salt
- 2 eggs, at room temperature
- 1 cup (250 ml) hazelnut spread (Nutella-style)
- 1/2 cup (105 g) brown sugar
- 1 tsp (5 ml) vanilla
- 1/2 cup (115 g) unsalted butter, melted and cooled slightly
- 2 tbsp unsalted butter, softened
- 2 tbsp unbleached all-purpose flour
- 2 tbsp milk powder
- 2 tbsp sugar
- 1 pinch fleur de sel
- 3 oz (85 g) dark chocolate, melted
- 2 tbsp cocoa powder
- 1 tsp gelatin
- 2 tbsp (30 ml) water
- 2 tbsp sugar
- 1 tbsp cornstarch
- 1 cup (150 g) fresh or frozen black cherries, pitted and halved, plus more for serving
- 2 egg yolks
- 2 tbsp sugar
- 1 cup (250 ml) 35% whipping cream, hot
- 4 oz (115 g) dark chocolate, chopped
Instructions
- Place the white chocolate in a bowl.
- In a small pot, bring the cream and amaretto to a boil. Pour the hot cream over the chocolate and let sit for 1 minute without stirring. Whisk until smooth. Cover and refrigerate for 6 hours.
