Hazelnut, Cherry and Amaretto Brownies

Ingredients

  • 3 oz (85 g) white chocolate, chopped
  • 3/4 cup (180 ml) 35% whipping cream
  • 1 tbsp (15 ml) almond liqueur (amaretto)
  • 1/2 cup (75 g) unbleached all-purpose flour
  • 1/3 cup (45 g) roasted hazelnuts, chopped
  • 1/4 tsp salt
  • 2 eggs, at room temperature
  • 1 cup (250 ml) hazelnut spread (Nutella-style)
  • 1/2 cup (105 g) brown sugar
  • 1 tsp (5 ml) vanilla
  • 1/2 cup (115 g) unsalted butter, melted and cooled slightly
  • 2 tbsp unsalted butter, softened
  • 2 tbsp unbleached all-purpose flour
  • 2 tbsp milk powder
  • 2 tbsp sugar
  • 1 pinch fleur de sel
  • 3 oz (85 g) dark chocolate, melted
  • 2 tbsp cocoa powder
  • 1 tsp gelatin
  • 2 tbsp (30 ml) water
  • 2 tbsp sugar
  • 1 tbsp cornstarch
  • 1 cup (150 g) fresh or frozen black cherries, pitted and halved, plus more for serving
  • 2 egg yolks
  • 2 tbsp sugar
  • 1 cup (250 ml) 35% whipping cream, hot
  • 4 oz (115 g) dark chocolate, chopped

Instructions

  1. Place the white chocolate in a bowl.
  2. In a small pot, bring the cream and amaretto to a boil. Pour the hot cream over the chocolate and let sit for 1 minute without stirring. Whisk until smooth. Cover and refrigerate for 6 hours.
