New Year’s Cake (Vasilopita)

Ingredients

  • 1 ¾ cups (265 g) unbleached all-purpose flour
  • ½ tsp baking soda
  • ½ tsp ground nutmeg
  • ¾ cup (180 ml) 2% plain Greek yogurt
  • 2 lemons, zest finely grated
  • 2 tbsp (30 ml) lemon juice
  • ½ cup (115 g) unsalted butter, softened
  • 1 ½ cups (315 g) sugar
  • 2 eggs
  • 1 small ceramic object or coin wrapped in foil (optional)
  • Icing sugar

Instructions

  1. With the rack in the middle position, preheat the oven to 350°F (180°C). Butter the sides of an 8-inch (20 cm) springform pan with removeable bottom. Line the bottom with parchment paper.
  2. In a bowl, combine the flour, baking soda and nutmeg. Set aside.
  3. In another bowl, combine the yogurt, lemon zest and juice.
  4. In a third bowl, cream the butter and sugar with an electric mixer. Add the eggs one at a time until combined. Add the dry ingredients alternating with the yogurt mixture until smooth. Spread the batter out in the prepared cake pan. Insert the ceramic object into the batter.
  5. Bake for 50 minutes or until a toothpick inserted in the centre of the cake comes out clean. Let cool completely on a wire rack, about 3 hours. Unmould.
  6. Place a stencil with the numbers of the new year, stars or other shapes, if desired, over the top of the cake. Sprinkle the cake with icing sugar. Delicately remove the stencil. The cake will keep in an airtight container for 5 days at room temperature.
