Quick Pickled Radishes
Ingredients
- 2 cups (280 g) radishes, thinly sliced on a mandoline
- 2 tbsp (30 ml) lime juice
- 2 tbsp sugar
- 1 tbsp jalapeño pepper, seeded and finely chopped
- ½ tsp salt
- A few cilantro stems or leaves (optional)
Instructions
- In a bowl, combine the radishes with the lime juice, sugar, jalapeño and salt. Let marinate for 15 minutes. Add the cilantro, if desired.
- The pickled radishes will keep for 4 days in an airtight container in the refrigerator.
