Vegetarian Poutine with Grilled Halloumi

Ingredients

  • 2 onions, thinly sliced
  • 2 tbsp unsalted butter
  • 2 ½ cups (625 ml) vegetable broth
  • 1 ½ tsp cornstarch
  • 2 tbsp (30 ml) low-sodium soy sauce
  • 1 tsp (5 ml) hot sauce of your choice
  • 6 oz (170 g) halloumi cheese, cut into large slices ½ inch (1 cm) thick
  • 6 whole green onions, trimmed
  • 3 tbsp (45 ml) canola oil
  • 1 ½ lb (675 g) fingerling or baby potatoes, quartered
  • ½ tsp dried oregano

Instructions

  1. In a pot over high heat, cook the onions in the butter until very caramelized, about 5 minutes. Add the broth and bring to a boil. Simmer until the sauce has reduced by one-third, about 10 minutes. Remove from the heat.
  2. Using a hand blender, purée the mixture until smooth.
  3. In a small bowl, whisk the cornstarch into the soy sauce.
  4. Whisk the cornstarch mixture into the sauce. Bring to a boil. Simmer until the sauce is smooth and thickened. Add the hot sauce. Cover and keep warm.
