Oatmeal and Dried Fruit Confit with Orange Juice
Ingredients
- ½ cup (100 g) dried apricots, quartered
- ¼ cup (40 g) dried cranberries
- ½ cup (125 ml) orange juice
- 2 cups (500 ml) unsweetened oat beverage
- 1 cup (100 g) quick-cooking oats
- 2 tbsp (30 ml) maple syrup
- 1 pinch ground cinnamon
- 2 tbsp (30 ml) natural peanut butter (see note)
- 1 small orange, peeled and cut into skinless segments, and the segments cut into pieces
- 2 tbsp pumpkin seeds
Instructions
- In a small pot over medium-high heat, bring the dried fruits and orange juice to a boil. Simmer for 5 minutes or until the liquid has almost completely evaporated. Transfer the mixture to a bowl and let cool.
- In another pot, bring the oat beverage, oats, maple syrup and cinnamon to a boil while stirring constantly. Simmer for 1 minute. Remove from the heat and let sit for 2 minutes. Adjust the consistency with more oat beverage, as needed
- Serve the oatmeal in bowls. Top with the peanut butter, dried fruits, orange pieces and pumpkin seeds.
