Lamb Burgers with Arugula Pesto and Roasted Onion
Ingredients
- 1 large yellow onion, cut into 12 wedges
- 2 tbsp (30 ml) olive oil
- 1 cup (25 g) arugula
- 2 tbsp roasted pumpkin seeds
- 2 tbsp (30 ml) olive oil
- 2 tsp (10 ml) lemon juice
- 1 tsp garlic, chopped
- 1 lb (450 g) lean ground lamb
- ⅓ cup (30 g) panko breadcrumbs
- 1 tbsp ground sumac
- 1 egg
- 2 tbsp (30 ml) olive oil
- 4 hamburger buns, toasted
- ½ cup (125 ml) sour cream
- ½ cup (15 g) arugula
Instructions
- With the rack in the middle position, preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- On the baking sheet, toss the onion wedges with the oil. Season with salt and pepper. Bake for 30 minutes or until the onion is tender and golden.
