Garlic Zucchini
Ingredients
- 2 large yellow zucchini
- 2 large green zucchini
- 3 cloves garlic, finely chopped
- 3 green onions, finely chopped
- 2 tablespoons (30 ml) olive oil
- 15-1 to 2 tablespoons (30 ml) chopped fresh oregano
- Salt and pepper
Instructions
- Cut the zucchini in half lengthwise, then into of 1-cm (1/2-inch) pieces.
- In a large skillet or wok, stir-fry all the ingredients together until the zucchini is tender but still crunchy. Season with salt and pepper.
- Serve with the Herb-Crusted Pork Loin or the Grilled Salmon with Honey and Cilantro.
