Ингредиенты

  • 3 medium onions, thinly sliced
  • 1 garlic clove, finely chopped
  • 3 tbsp butter
  • 1 ¼ cups (150 g) chickpea flour (see note)
  • 2 tsp curry powder
  • 1 tsp ground ginger
  • ½ tsp salt
  • ½ cup (125 ml) water
  • 1 cup (170 g) cooked chicken, shredded
  • 3 tbsp cilantro, finely chopped, plus more for serving
  • Melted butter, for brushing

Инструкция

  1. In a large skillet over medium heat, soften the onion and garlic in the butter until translucent. Season with salt. Let cool.
  2. In a bowl, combine the chickpea flour, spices and salt. Season with pepper. Add the water while stirring with a spatula. Add the onion mixture, chicken and cilantro. Mix well. The mixture will be very thick.
  3. Preheat a waffle iron on high. Using a pastry brush, generously coat the cavities of the waffle iron with melted butter.
  4. Pour about ⅓ cup (75 ml) of the bhaji batter into each cavity. Close the device. Cook for 5 minutes or until the waffles are golden. Cover and keep warm on a wire rack. Repeat with the remaining batter.
  5. Serve the bhaji waffles with plain yogurt mixed with Sriracha, sprinkled with coriander, if desired.
