Shrimp and Kimchi Stir-Fry

Ingredients

  • 2 green onions, white parts finely chopped, green parts cut into 1-inch (2.5 cm) pieces
  • 2 garlic cloves, chopped
  • 1 tbsp (15 ml) vegetable oil
  • 1 ½ cups (375 ml) homemade kimchi or store-bought
  • ½ tsp brown sugar
  • 1 lb (450 g) small shrimp (91-110), shelled and deveined
  • 1 tbsp (15 ml) toasted sesame oil
  • 1 tbsp toasted sesame seeds

Instructions

  1. In a large skillet over medium heat, soften the chopped green onion whites with the garlic in the vegetable oil for 1 minute. Add the kimchi and brown sugar. Cook for 3 minutes or until the cooking juices evaporate.
  2. Add the shrimp, sesame oil and seeds. Cook for 2 minutes or until the shrimp are cooked through. Add the remaining pieces of green onion. Serve over jasmine rice, if desired.
