- ½ cup (15 g) mixed herb leaves (such as mint, cilantro, chervil), coarsely chopped
- 3 tbsp watercress, stems removed
- 4 slices multi-grain bread, toasted
- ¼ cup (45 g) red grapes, halved
- Olive oil, to taste
- Fleur de sel, to taste

- In a bowl, combine the chicken, celery, apple, green onion, mayonnaise and curry powder. Season with salt and pepper.
- In another bowl, combine the herbs and watercress.
- Divide the chicken salad among the slices of toasted bread. Top with the grapes and the herb salad. Drizzle with olive oil and sprinkle with fleur de sel, if desired.
