Curry Chicken Salad Open-Faced Sandwich

Ingredients

  • 1 ¼ cups (215 g) cooked chicken, diced
  • ¼ cup (35 g) celery, diced
  • ¼ cup (30 g) Granny Smith apple, diced
  • 1 green onion, thinly sliced
  • 3 tbsp (45 ml) mayonnaise
  • 1 tsp curry powder
  • ½ cup (15 g) mixed herb leaves (such as mint, cilantro, chervil), coarsely chopped
  • 3 tbsp watercress, stems removed
  • 4 slices multi-grain bread, toasted
  • ¼ cup (45 g) red grapes, halved
  • Olive oil, to taste
  • Fleur de sel, to taste

Instructions

  1. In a bowl, combine the chicken, celery, apple, green onion, mayonnaise and curry powder. Season with salt and pepper.
  2. In another bowl, combine the herbs and watercress.
  3. Divide the chicken salad among the slices of toasted bread. Top with the grapes and the herb salad. Drizzle with olive oil and sprinkle with fleur de sel, if desired.
