Ингредиенты

  • 1 ½ cups (55 g) cilantro leaves and stems
  • ½ cup (15 g) flat-leaf parsley leaves
  • 1 garlic clove, halved
  • 1 jalapeño pepper, seeded and chopped
  • 6 tbsp (90 ml) olive oil
  • ¼ cup (60 ml) water
  • 1 tsp ground cumin
  • ½ tsp sugar
  • ½ tsp salt
  • ¼ tsp ground cardamom
  • 1 pinch ground cloves

  1. In a blender, purée all of the ingredients into a fairly smooth paste.
  2. Transfer to an airtight container. The zhoug will keep for 3 days in the refrigerator. Delicious served with white fish or with our <a href="https://www.ricardocuisine.com/en/recipes/9166-corncob-papillote-with-spice-butter"target="_blank">corncob papillote with spice butter</a>.
