  • 3 cups (300 g) small cauliflower florets
  • 1 ¼ cups (125 g) mozzarella cheese, grated
  • 2 tbsp Parmesan cheese, freshly grated
  • ¼ cup (30 g) chickpea flour (see note)
  • 1 egg
  • ½ tsp dried oregano
  • ¼ tsp red pepper flakes
  • ¼ tsp garlic powder
  • Olive oil, for brushing
  • ½ cup (125 ml) homemade or store-bought tomato sauce
  • 1 cup (100 g) mozzarella cheese, grated
  • 1 cup (25 g) arugula
  • 8 cherry tomatoes, halved

  1. With the rack in the lowest position, preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper. Oil the paper.
  2. In a food processor, chop the cauliflower until it resembles the texture of couscous. Place in a clean dishcloth and ring out as much liquid as possible. Place the dried out cauliflower in a large bowl.
  3. Add the remaining ingredients, except for the oil, to the bowl. Mix well using a spatula or your hands. Season with pepper.
  4. With your hands, spread out the cauliflower mixture on the prepared baking sheet into an 11-inch (28 cm) circle, about ¼ inch (5 mm) thick. Brush with oil. Bake for 17 to 20 minutes or until golden.
