Grilled Chicken with Greek Yogurt and Smoked Paprika Marinade
Ingredients
- ¾ cup (180 ml) 0% Greek yogurt (see note)
- 2 tbsp (30 ml) olive oil
- 1 tbsp (15 ml) red wine vinegar
- 1 tbsp (15 ml) tomato paste
- 2 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp salt
- ½ tsp ground black pepper
- 1/8 tsp cayenne pepper
- 4 bone-in chicken thighs with skin
- 4 bone-in chicken drumsticks with skin
Instructions
- In a bowl, whisk together all of the ingredients except for the chicken. Add the chicken and toss to coat well in the marinade. Cover and let marinate for 8 hours in the refrigerator.
- Preheat half of the grill, setting the burners to high. Oil the grate.
- Drain the chicken and discard the marinade. Oil the chicken. Place on the side of the barbecue that is off, skin-side down. Close the barbecue lid. Cook for 20 minutes.
- Flip the chicken over and cook for another 15 minutes or until the chicken is cooked through. Finish off cooking by quickly grilling the chicken, skin-side down, on the hot side of the barbecue. Serve with a green salad, if desired.
