Piri Piri Sauce
Ingredients
- ½ cup (125 ml) extra virgin olive oil
- ½ cup (125 ml) salted butter, melted
- 1/3 cup (75 ml) lemon juice
- 3 tbsp (45 ml) Portuguese hot sauce, malagueta chili pepper sauce or other hot sauce (Frank’s Red Hot-style)
- 1 tbsp sweet paprika
- 1 tsp ground coriander
- 1 tsp salt
- ½ tsp freshly ground black pepper
- 3 garlic cloves, peeled
- 3 green onions, thinly sliced
- 3 tbsp flat-leaf parsley, coarsely chopped
- 2 bay leaves, crumbled
- 1 piece fresh ginger, about 1 inch (2.5 cm) long, peeled and thinly sliced
Instructions
- In a food processor or blender, purée all of the ingredients until smooth. Pour into a glass jar. Cover and refrigerate.
- This piri piri sauce will keep for 1 week in the refrigerator.
