  • ¼ cup (20 g) unsweetened shredded coconut
  • 1 tsp butter
  • 2 tsp (10 ml) honey
  • ½ tsp curry powder
  • ½ cup (125 ml) plain 10% yogurt
  • ¼ cup (60 ml) coconut cream (see note)
  • 1 tbsp dill, finely chopped
  • 1/4 cup (55 g) melted butter
  • 2 tsp curry powder
  • 1 cauliflower, cut into large florets
  • 1 Lebanese cucumber, halved lengthwise and thinly sliced
  • ¼ cup (45 g) pomegranate seeds
  • 1 tbsp (15 ml) lime juice
  • 1 tbsp dill, finely chopped

  1. In a small skillet over medium heat, toast the coconut in the butter along with the honey and curry powder. Set aside.
