Clean-Out-the-Fridge Vegetable Broth
Ingredients
- 2 onions, unpeeled
- 1 tbsp (15 ml) vegetable oil
- 4 carrots, unpeeled, washed and chopped into chunks
- 2 celery stalks with leaves or the stems and fronds of 1 fennel bulb, chopped
- 1 leek, green part only (or 3 green onions), coarsely chopped
- ½ tomato or a few cherry tomatoes (optional)
- A few parsley stems
- 12 cups (3 litres) water
- 10 whole peppercorns
- 1 thyme or rosemary sprig
- 1 bay leaf
- 1 whole clove
Instructions
- Remove the first layer of the onion skins. Halve the onions.
- In a large pot over medium-high heat, brown the cut sides of the onions in the oil until caramelized. Add the remaining ingredients.
- Bring to a boil and simmer for 45 minutes or until the vegetables are tender. Strain the broth and compost the vegetables. Let cool before refrigerating or freezing.
