Tuna and Miso Wraps
Ingredients
- 2 cups (170 g) flat or regular green cabbage, thinly sliced on a mandoline
- 2 Lebanese cucumbers, thinly sliced into rounds on a mandoline
- 1 shallot, thinly sliced into rounds on a mandoline
- 3 tbsp (45 ml) rice vinegar
- 1 tsp sugar
- 2 cans (7 oz/198 g each) oil-packed tuna, drained and crumbled
- 2 green onions, chopped
- 1 tbsp (15 ml) miso
- 2 tsp (10 ml) toasted sesame oil
- 1 tsp (5 ml) low-sodium soy sauce
- 1/2 tsp (2.5 ml) sambal oelek, or more to taste
- 4 soft wheat tortillas, each 10 inches (25 cm) in diameter
- 1 very ripe avocado, quartered
- 1 cup (25 g) baby spinach
- 1 cup (35 g) cilantro leaves and stems
- 1 cup (35 g) cilantro leaves and stems 1 package (120 g) instant ramen noodles, without the sachet of seasoning, broken
Instructions
- In a bowl, combine all of the ingredients. Season with salt. Let marinate for 5 minutes or until ready to assemble the wraps. Drain before using.
