Make-Ahead Fluffy Waffles
Ingredients
- 2 cups (300 g) unbleached all-purpose flour
- 1 tbsp sugar
- 1 tsp instant yeast
- 1/2 tsp salt
- 2 eggs
- 1 3/4 cups (430 ml) warm milk
- 1/3 cup (75 g) unsalted butter, melted
Instructions
- In a bowl, combine the flour, sugar, yeast and salt.
- In another large bowl, whisk the eggs. Whisk in the milk and melted butter. Add the flour mixture and mix until smooth. Cover. Refrigerate for 8 hours or overnight but no longer than 24 hours (see note).
- Preheat a waffle iron. Pour about 1/4 cup (60 ml) of the batter into each cavity. Close the machine. Cook for 4 to 5 minutes or until the waffles are cooked through. Keep warm. Repeat with the remaining batter.
- Delicious served with maple syrup or another sweet or savoury topping, such as in our Waffles with Ham, Poached Eggs and Béarnaise Sauce.
