Make-Ahead Fluffy Waffles

Ingredients

  • 2 cups (300 g) unbleached all-purpose flour
  • 1 tbsp sugar
  • 1 tsp instant yeast
  • 1/2 tsp salt
  • 2 eggs
  • 1 3/4 cups (430 ml) warm milk
  • 1/3 cup (75 g) unsalted butter, melted

Instructions

  1. In a bowl, combine the flour, sugar, yeast and salt.
  2. In another large bowl, whisk the eggs. Whisk in the milk and melted butter. Add the flour mixture and mix until smooth. Cover. Refrigerate for 8 hours or overnight but no longer than 24 hours (see note).
  3. Preheat a waffle iron. Pour about 1/4 cup (60 ml) of the batter into each cavity. Close the machine. Cook for 4 to 5 minutes or until the waffles are cooked through. Keep warm. Repeat with the remaining batter.
  4. Delicious served with maple syrup or another sweet or savoury topping, such as in our Waffles with Ham, Poached Eggs and Béarnaise Sauce.
