Potato and Green Bean Salad with Pickled Shallots
Ingredients
- 3 tbsp (45 ml) vegetable oil
- 2 tbsp (30 ml) apple cider vinegar
- 1 tbsp (15 ml) whole-grain mustard
- 1 tbsp (15 ml) honey
- 1 lb (450 g) unpeeled baby potatoes
- 1 lb (450 g) thin green beans, trimmed
- 6 oz (170 g) bacon, chopped
- ¼ cup (25 g) roasted pecans, chopped
- 4 poached eggs (optional)
- 1 recipe pickled shallots
Instructions
- In a bowl, whisk together all of the ingredients. Season with salt and pepper. Set aside.
