Shrimp Fritters with Lime Mayonnaise
These shrimp fritters, bursting with flavour, are a great starter or party bite for the holidays.
Ingredients
- 2 green onions, cut into fine julienne
- 1/3 cup (75 ml) mayonnaise
- ½ lime, zest finely grated
- 2 tsp lime juice
- ¾ cup (115 g) unbleached all-purpose flour
- ½ tsp baking powder
- ¼ tsp salt
- 1 tsp sweet paprika, plus more for serving
- 1/8 tsp cayenne pepper
- 1 egg
- 6 tbsp (90 ml) water
- 7 oz (200 g) frozen Nordic shrimp, thawed and chopped
- 2 green onions, finely chopped
- 2 garlic cloves, finely chopped
- Vegetable oil, for frying
Instructions
- In a small bowl of ice water, soak the green onions for 30 minutes. Drain and pat dry.
