Oysters with Maple-Vegetable Mignonette

These oysters served on a bed of ice are the ideal holiday bites.

Ingredients

  • 2 radishes, cut into small dice
  • 1 celery stalk, cut into small dice
  • ¼ cup (60 ml) apple cider vinegar
  • 3 tbsp chives, finely chopped
  • 2 tsp (10 ml) amber maple syrup
  • ¼ tsp black pepper, cracked
  • 24 small oysters, cleaned
  • Tabasco-style sauce, for serving
  • Lemon wedges, for serving

Instructions

  1. In a bowl, combine the radishes with the celery, vinegar, chives, maple syrup and pepper. Season with salt. Refrigerate.
  2. Shuck the oysters and detach the meat from the shells. Arrange the oysters on a serving dish covered in packed, clean snow, crushed ice or coarse salt.
  3. Garnish the oysters with the mignonette. Drizzle with Tabasco, to taste. Serve with lemon wedges.
