Chicken with Blood Orange Sauce
Ingredients
- 1 1/2 cups (375 ml) white wine
- 1 cup (250 ml) chicken broth
- 1 cup (250 ml) water
- 2 cloves garlic, crushed
- 8 branches fresh thyme
- 4 boneless, skinless chicken breasts
- Salt and pepper
- 2 shallots, finely chopped
- 1 tablespoon (15 ml) olive oil
- 1 tablespoon (15 ml) honey
- 2 tablespoons (30 ml) red wine vinegar
- 3/4 cup (180 ml) blood orange juice (about 4 oranges)
- 1 tablespoon (15 ml) cold butter
- Supremes of 2 blood oranges
- Salt and pepper
Instructions
- In a saucepan, bring all ingredients except the chicken to a boil. Season generously with salt and pepper. Add the chicken and return to a boil. Reduce heat to medium and simmer for 10 minutes. Remove from the heat and cover. Let stand for 10 minutes. Drain.
