Artichoke and Mandarin Canapés
Hosting a vegetarian holiday meal this year and on the lookout for a few great recipes? These tasty party bites with artichokes are sure to please!
Ingredients
- 1 jar (170 ml) oil-packed artichokes, drained
- 1/4 cup (10 g) flat-leaf parsley, finely chopped
- 2 tbsp roasted sunflower seeds, chopped
- 2 tbsp Parmesan cheese, freshly grated
- 2 tbsp (30 ml) olive oil
- 24 thin slices ficelle bread, toasted
- 1 small garlic clove, halved (optional)
- 16 mandarin orange (or regular orange) segments, halved (about 1 to 2 mandarins)
Instructions
- With a knife, finely chop the artichokes and place in a bowl. Add the parsley, sunflower seeds, Parmesan and oil. Season with salt and pepper. Mix well.
- When ready to serve, rub the toasted bread with the garlic, if desired. Spread the artichoke mixture over the bread. Top with the mandarin pieces. Drizzle with olive oil, if desired.
