Fried Cod and Pickle Burgers

Elevate your fish burger by adding a crunchy fried pickle! It’s your new summer must-have!

Ingredients

  • 1/3 cup (75 ml) mayonnaise
  • 1 green onion, chopped
  • 1 tbsp (15 ml) lemon juice
  • ½ tsp (2.5 ml) wasabi paste
  • 1 ¼ cups (190 g) unbleached all-purpose flour
  • ¾ cup (180 ml) cold pale ale
  • 2 tsp dill, finely chopped
  • ¾ lb (340 g) cod fillets, cut into 4 pieces
  • 1 large dill pickle, cut into 4 long slices
  • Vegetable oil, for frying
  • 4 slightly elongated hamburger buns, cut in half (see note)
  • A few Boston lettuce leaves

Instructions

  1. In a bowl, combine all of the ingredients. Cover and refrigerate.
