Grilled Vegetable and Cheese Skewers

Welcome to barbecue season! Tie your apron strings and grab your basting brush because we’ve got a great grilled skewer recipe to share with you!

Ingredients

  • 2 bell peppers, various colours, seeded and cubed
  • 3/4 lb (340 g) halloumi-style grilling cheese, cubed
  • 1/2 lb (225 g) whole white mushrooms
  • 2 tbsp (30 ml) olive oil
  • 2 tsp (10 ml) balsamic vinegar
  • 1/2 tsp dried oregano

Instructions

  1. Preheat the grill, setting the burners to medium-high. Oil the grate.
  2. In a bowl, combine all of the ingredients. Season with salt and pepper.
  3. Thread the vegetables, alternating varieties, onto metal or wood skewers (which have been soaked in water for 30 minutes). Thread the cheese onto other skewers. Set aside on a large plate.
  4. Grill the vegetable skewers for 10 minutes, turning them over a few times during cooking using kitchen tongs. Place on another plate. Oil the grate again.
  5. Grill the cheese skewers on both sides, turning them over as soon as the cheese is grilled, about 1 minute per side.
  6. Serve immediately with pita bread, if desired.
