Parmesan–Chorizo Consommé “Espresso”

Ingredients

  • 3/4 cup (180 ml) chicken broth
  • 3/4 cup (180 ml) beef consommé
  • 4 to 6 slices chorizo sausage cut diagonally, about 2 mm thick
  • 4 to 6 shavings Parmesan cheese
  • 2 teaspoons (10 ml) minced fresh chives
  • Pepper

Instructions

  1. In a saucepan, bring the broth and consommé to a boil. Season with pepper. Pour the boiling broth into 4 to 6 espresso cups. Place a slice of chorizo on the rim of each cup. Place a Parmesan shaving on each chorizo slice and sprinkle with chives.
  2. Serve, allowing each guest to put the garnish into the cup to flavour the broth.
