Spring Salad with Garlic Scape Dressing

Ingredients
- 1 tbsp garlic scapes, trimmed, finely sliced
- 1 tbsp (15 ml) white wine vinegar
- 1/2 tsp sugar
- 1/2 tsp salt
- 3 tbsp (45 ml) mix of vegetable and olive oil
- 12 large asparagus spears, trimmed, stalks peeled
- 8 radishes
- 4 cups (85 g) lamb’s lettuce or purslane
- 1/4 cup (30 g) roasted pine nuts
Instructions
- In a large bowl, combine the garlic scapes, vinegar, sugar and salt. Let sit for 5 minutes.
- Drizzle in the oil while whisking vigorously until emulsified. Season with pepper.
