Vegetable Broth

Ingredients

  • 16 cups (4 litres) water
  • 2 large carrots, unpeeled, cut into pieces 1/2 inch (1 cm) thick
  • 2 celery stalks, cut into pieces 1/2 inch (1 cm) thick
  • 2 garlic cloves, peeled
  • 1 onion, unpeeled, cut into large pieces
  • 1 leek, cut into pieces 1/2 inch (1 cm) thick
  • 2 thyme sprigs
  • 2 parsley sprigs
  • 1 bay leaf
  • 1/2 oz (15 g) dried porcini mushrooms
  • 1 tsp salt

Instructions

  1. Place all of the ingredients in a large pot. Bring to a boil. Simmer over medium heat for 1 hour or until the broth has reduced by half. Strain through a sieve. Discard the vegetables. You will obtain about 8 cups (2 litres) vegetable broth.
