Juniper Syrup
Ingredients
- 1 tbsp juniper berries
- 1 tsp coriander seeds
- 1 tsp fennel seeds
- 3 cardamom pods
- 2 cups (420 g) sugar
- 1 cup (250 ml) water
- 3 tbsp (45 ml) lime juice
Instructions
- Using a mortar and pestle, roughly grind the juniper berries, the coriander seeds, the fennel seeds and the cardamom pods. Place the spices in a pot. Add the sugar, the water and the lime juice.
- Bring to a boil over medium heat and let simmer for 5 minutes. Strain.
- Pour into an airtight container. Let cool, cover and refrigerate. The syrup will keep for 1 month in the refrigerator.
