Minted Mashed Potatoes
Ingredients
- 4 cups (680 g ) potatoes, peeled and cubed
- 2 pears, peeled, cored and cubed
- 1/4 cup (55 g) butter
- 1/2 cup (125 ml) milk (approximate)
- 2 tbsp fresh mint, chopped
Instructions
- Place the potatoes and pears in a pot. Cover with cold water. Season with salt. Bring to a boil and simmer for 15 minutes or until the potatoes are tender. Drain and return to the pot.
- Using a potato masher, crush the potatoes and pears with the butter until smooth. Using an electric mixer, beat in the milk and mint until smooth. Adjust the seasoning.
- Delicious with lamb chops with mint gremolata.
