  • 4 cups (680 g ) potatoes, peeled and cubed
  • 2 pears, peeled, cored and cubed
  • 1/4 cup (55 g) butter
  • 1/2 cup (125 ml) milk (approximate)
  • 2 tbsp fresh mint, chopped

  1. Place the potatoes and pears in a pot. Cover with cold water. Season with salt. Bring to a boil and simmer for 15 minutes or until the potatoes are tender. Drain and return to the pot.
  2. Using a potato masher, crush the potatoes and pears with the butter until smooth. Using an electric mixer, beat in the milk and mint until smooth. Adjust the seasoning.
  3. Delicious with lamb chops with mint gremolata.
