Mini Escargot Skewers with Pastis
Ingredients
- 1 shallot, finely chopped
- 2 garlic cloves, finely chopped
- 2 cans (115 g each) escargots, rinsed and drained
- 2 tbsp butter
- 1/4 cup (60 ml) pastis
- 1/2 cup (125 ml) white wine
- 2 tbsp (30 ml) mayonnaise
- 1 tbsp fresh tarragon, finely chopped
Instructions
- In a pot, sauté the shallots, garlic and escargots in the butter for 3 minutes. Season with salt and pepper. Deglaze with the pastis and wine and reduce until almost dry. Transfer to a bowl and let cool.
- Add the mayonnaise and tarragon. Adjust the seasoning.
- Preheat the grill, setting the burners to high. Oil the grate.
- Thread the escargots on small wooden skewers that have been soaked in water for 30 minutes.
- Grill the skewers for 2 minutes per side. Serve as an hors d’oeuvre.
