Savoury Cucumber Yogurt with Toasted Almonds
For mid-morning pick-me-ups, there’s nothing better than this savoury yogurt flavoured with cucumber and garnished with crunchy almond slices.
Ingredients
- 1/2 cup (125 ml) plain Greek yogurt
- 1/4 cup (50 g) grated Lebanese cucumber
- 1 tsp (5 ml) lime juice
- 1 tbsp sliced almonds, toasted
- 3 thin slices Lebanese cucumber, drizzled with lime juice
- Olive oil, for drizzling
- Fleur de sel, to taste
- Sumac, to taste (optional)
Instructions
- In a bowl, combine the yogurt, grated cucumber and lime juice. Top with the almonds, sliced cucumber and a drizzle of olive oil. Sprinkle with fleur de sel and sumac. Serve immediately.
