Homemade Coconut Milk
For this recipe, you only need a coconut, some water, a blender and few minutes to make the equivalent of a can of store-bought coconut milk. Without any added sugar or preservatives, it can be used in a range of sweet and savoury recipes.
Ingredients
- 1 coconut, about 1 to 1 ¼ lb (450 to 565 g)
- 1 3/4 cups (430 ml) hot water
Instructions
- Open the coconut and remove the meat. On a work surface, roughly chop the coconut meat.
- In a blender, purée the coconut meat with the hot water for 2 minutes or until smooth. Place a sieve over a bowl. Strain the coconut mixture through the sieve, pressing it down with the back of a ladle to extract as much liquid as possible. Transfer the coconut milk to an airtight container. Refrigerate until ready to use.
