Love Salad

Ingredients

  • 1 garlic clove, chopped
  • 2 slices fresh ginger
  • 1/3 cup (75 ml) olive oil
  • 1/3 cup (75 ml) low-sodium soy sauce
  • 1 tbsp (15 ml) honey
  • 2 cups (300 g) cooked parboiled rice, cold
  • ½ lb (225 g) bean sprouts
  • 3 celery stalks, diced
  • 1 red bell pepper, seeded and diced
  • 6 cups (140 g) fresh baby spinach
  • ½ lb (225 g) white mushrooms, thinly sliced
  • ½ cup (65 g) roasted cashews, coarsely chopped
  • 1/3 cup (45 g) raisins
  • 2 tbsp flat-leaf parsley, finely chopped

Instructions

  1. In a small pot, brown the garlic and ginger in 2 tbsp (30 ml) of the oil. Transfer to a bowl. Remove the ginger. Add the remaining oil (3 tbsp/45 ml), the soy sauce and honey. Mix well.
