Love Salad
Ingredients
- 1 garlic clove, chopped
- 2 slices fresh ginger
- 1/3 cup (75 ml) olive oil
- 1/3 cup (75 ml) low-sodium soy sauce
- 1 tbsp (15 ml) honey
- 2 cups (300 g) cooked parboiled rice, cold
- ½ lb (225 g) bean sprouts
- 3 celery stalks, diced
- 1 red bell pepper, seeded and diced
- 6 cups (140 g) fresh baby spinach
- ½ lb (225 g) white mushrooms, thinly sliced
- ½ cup (65 g) roasted cashews, coarsely chopped
- 1/3 cup (45 g) raisins
- 2 tbsp flat-leaf parsley, finely chopped
Instructions
- In a small pot, brown the garlic and ginger in 2 tbsp (30 ml) of the oil. Transfer to a bowl. Remove the ginger. Add the remaining oil (3 tbsp/45 ml), the soy sauce and honey. Mix well.
