Croque Monsieur-Style Waffles
Ingredients
- 1/4 cup (55 g) unsalted butter
- 1/4 cup (35 g) unbleached all-purpose flour
- 2 cups (500 ml) milk
- 1 pinch ground nutmeg
- Salt and pepper
- 4 Corn Flour and Cheddar Waffles
- 5 oz (150 g) ham slices
- 3/4 lb (340 g) trimmed asparagus, blanched
- 1 cup (100 g) grated sharp cheddar cheese
Instructions
- In a saucepan over medium heat, melt the butter. Add the flour and continue cooking for 1 minute, stirring constantly. Add the milk and bring to a boil, whisking constantly. Gently simmer for about 5 minutes. Remove from the heat and add the nutmeg. Season with salt and pepper. Set aside.
