Sambal Oelek
Ingredients
- 1 lb (450 g) spicy cherry peppers, halved and stems removed (see note)
- 4 garlic cloves, peeled
- 1 tbsp sugar
- 1 tsp salt
- ½ cup (125 ml) white vinegar
Instructions
- In a food processor, purée the peppers and garlic with the sugar and salt, leaving small pieces of peppers intact.
- In a pot, bring the purée and vinegar to a boil. Simmer over medium-low heat for 10 minutes or until the pieces of pepper are translucent.
- Pour the hot sauce into one or several jars. Let cool. Cover and refrigerate. The sambal will keep for 3 weeks in the refrigerator or for 3 months in the freezer.
