Breakfast Poutine
This hearty breakfast includes golden potato fries, chorizo, creamy sauce, a poached egg, and cheese curds, bringing the essence of poutine to your morning menu.
Ingredients
- 1 3/4 lb (800 g) yellow-fleshed red potatoes, unpeeled, cut into sticks ½ inch (1 cm) thick (about 6 potatoes)
- 2 tbsp (30 ml) vegetable oil
- 2 fresh chorizo sausages, cut into pieces (about 1/3 lb/150 g)
- 2 tbsp (30 ml) white vinegar
- 2 eggs
- 2 tbsp butter
- 2 tbsp unbleached all-purpose flour
- 1 can (284 ml) condensed chicken both
- 1/2 cup (125 ml) 15% cooking cream
- 2 egg yolks
- 7 oz (200 g) cheese curds
- 1 tbsp chives, finely chopped
Instructions
- With the rack in the lowest position, preheat the oven to 450°F (230°C). Line a baking sheet with parchment paper.
- Place the potatoes in a strainer and rinse under cold running water. Dry with a clean dishcloth. On the baking sheet, toss the potatoes with the oil. Season with salt.
- Bake for 30 minutes or until starting to brown. Stir. Add the sausages and continue to bake for 10 minutes. Keep warm.
