Apple and Dark Chocolate Pound Cake

Ingredients

  • 2 1/2 oz (75 g) dark chocolate, coarsely chopped
  • 1/3 cup (75 ml) 35% heavy cream
  • 1 cup (140 g) unbleached all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 3/4 cup (170 g) unsalted butter, at room temperature
  • 3/4 cup (180 g) lightly packed brown sugar
  • 1/2 tsp (2.5 ml) vanilla extract
  • 3 eggs
  • 1 large Cortland apple, peeled, cored and cut into 3/4-inch (1.5 cm) dice

Instructions

  1. In a bowl, place the chocolate.
  2. In another bowl, heat the cream in the microwave oven.
  3. Pour the hot cream over the chocolate. Let melt for 2 minutes. With a spatula, stir until smooth. Refrigerate for about 20 minutes or until the ganache is firm but still malleable.
