Sweet Potato, Zucchini and Cheddar Pie
Ingredients
- 1 1/4 cups (310 ml) all-purpose flour
- 1/4 cup (60 ml) cold butter, cubed
- 1 pinch salt
- 1 egg
- 3 tablespoons (45 ml) olive oil
- 1 tablespoon (15 ml) water
- 1 onion, chopped
- 6 cups (1.5 litres) sweet potatoes, cubed
- 3 tablespoons (45 ml) butter
- 1/2 cup (125 ml) water
- 1/4 cup (60 ml) flour
- 1 pinch ground cloves
- 2 eggs
- Salt and pepper
- 1 cup (250 ml) shredded cheddar cheese
- 2 zucchinis, thinly sliced with a mandolin
- 1/3 cups (75 ml) black olives, coarsely chopped
- 1/4 cup (60 ml) olive oil
- Salt and pepper
Instructions
- In the bowl of a food processor, place flour, butter and salt. Pulse a few seconds at a time until the mixture has a grainy texture. Add the egg, oil and water. Pulse again a few seconds at a time until the dough begins to form a ball. Add a little water if necessary. Remove the dough from the processor. Form a ball with your hands. Cover with plastic wrap. Refrigerate for 30 minutes.
